Ingredients

For the Zucchini:

  • 2 medium zucchinis

  • 1 tbsp coconut butter

  • 1 minced garlic clove

  • A pinch of pink Himalayan salt

For the Cashew "Cheese":

  • 75 g (2.6 oz) soaked cashews (soaked overnight or at least for a few hours), drained and rinsed

  • 1 tbsp parmesan cheese or nutritional yeast (opt for nutritional yeast for a vegan & dairy-free version)

  • 1 minced garlic clove

  • Seasonings: a pinch each of salt, black pepper, chili flakes, and either dry or freshly chopped basil

  • 25 ml almond milk

Instructions

For the Zucchini:

  1. Preheat the Oven: Set it to 180°C (356°F).

  2. Prepare Your Zucchini: Cut each zucchini in half and remove the ends. Then, make small crosswise cuts along each half, slicing almost to the bottom but not all the way through.

  3. Add Flavor: Melt coconut butter and mix it with minced garlic. Brush this mixture over your zucchini and sprinkle with a pinch of salt.

  4. Bake: Place the zucchinis in the oven and bake for 10-12 minutes.

For the Cashew "Cheese":

  1. Blend Ingredients: While the zucchini bakes, put the cashews, parmesan or nutritional yeast, and garlic into a food processor. Season with salt, pepper, chili flakes, and basil.

  2. Create the Cheese: Add almond milk to the mix and blend until smooth.

  3. Combine: Remove the zucchini from the oven, spread the cashew cheese over the slices, and bake for an additional 5-7 minutes until golden.

Serve and Enjoy!

Serve your Hasselback Zucchini hot from the oven, ready to impress with its perfect balance of creamy and crispy textures.

This dish not only provides a delightful eating experience but also packs a nutritional punch, ensuring you're well-fed and ready for whatever the day may bring.
