Health(ish) mini RAW LIME CHEESECAKES

RECIPE: Mini Raw Lime Cheesecakes

Ingredients

For the Crust:

  • 1 cup (2.3 dl) raw cashews

  • 2 soft dates, pitted

  • 1 tbsp unflavoured maple syrup if you want it vegan (or honey for vegetarian option)

  • 1 tbsp unflavoured coconut oil (room temperature)

For the Filling:

  • 3 medium avocados, de-seeded and peeled

  • 60 ml freshly squeezed lime juice (approximately 3 limes)

  • 3 tbsp honey or maple syrup

  • 3 tbsp unflavoured coconut oil (room temperature)

  • Zest of 2 limes

  • 1/3 tsp pure vanilla extract

  • ⅛ tsp salt

For Decoration:

  • Fresh mint leaves

  • Lime slices

  • Lime zest

Instructions

  1. Prepare the Crust:

    • Blend all the crust ingredients in a food processor until well combined.

    • Press the mixture firmly into the bottom of individual silicone muffin pans.

    • Place the muffin pan in the freezer to set while you prepare the filling.

  2. Make the Filling:

    • In the same food processor, blend all the filling ingredients until you achieve a smooth, creamy consistency.

    • Pour the filling over the crust in the muffin pans, tapping the pan gently to level the filling. Use a spoon, knife, or spatula to smooth the tops if necessary.

  3. Freeze:

    • Freeze the cheesecakes for about 2 hours or overnight to set.

  4. Serve:

    • Remove the cheesecakes from the freezer about 30-45 minutes before serving to allow them to soften slightly.

    • Decorate with a slice of lime, fresh mint leaves, and additional lime zest.


Tips and Notes:

  • If you don’t have silicone muffin pans, line regular muffin pans with cling wrap to help remove the cakes easily.

  • You can also make a single larger cheesecake using a small springform pan. If using a 24 cm diameter springform pan, double the ingredients for best results.
