I´m really lucky that near my country house are many great places where to pick mushrooms. My favourites are chanterelles. It´s just so nice to pick your own mushrooms near your house and then later do a something with fresh mushrooms.
This time I made quinoa with mushrooms. It´s a perfect combination of two healthy and tasty things. Just add some fresh herbs and parmesan and you will get a tasty side dish or a light meal. Quinoa is one of my favourites. It´s just full of high protein and vitamins.
