Simple Quinoa with Chanterelles



I´m really lucky that near my country house are many great places where to pick mushrooms. My favourites are chanterelles. It´s just so nice to pick your own mushrooms near your house and then later do a something with fresh mushrooms.

This time I made quinoa with mushrooms. It´s a perfect combination of two healthy and tasty things. Just add some fresh herbs and parmesan and you will get a tasty side dish or a light meal. Quinoa is one of my favourites. It´s just full of high protein and vitamins.


Quinoa with Chanterelles


  • 2 dl quinoa
  • 2 cloves of minced garlic
  • Some sea salt, pepper and thyme
  • Some freshly grounded parmesan
  • 200 g chanterelles
  • 1 tsp coconut butter or usual butter


  1. Prepare the quinoa as the package introductions say. Usually, you need 1 cup of quinoa and 2 cups of water and then simmer the quinoa in low heat about 15-20 minutes until there´s no water. I suggest you add some salt and 1 clove of minced garlic into the quinoa water.
  2. Lightly fry the chanterelles with butter and 1 clove of minced garlic until there comes no water.
  3. Add ready quinoa and season it with herbs, parmesan, salt and pepper.
  4. Serve warm.
