I just love summer! There are so many fresh things to eat. I love going into the woods with the dog. It`s like meditation… I can spend endless hours in the woods collecting berries and mushrooms. There are many great places near my county home where to harvest berries and mushrooms. In the summer I always pick all the good thing nature gives us. My freezer is full of all kind of berries, mushrooms, herbs. In the winter it´s just so great to enjoy all kind of berries in the smoothies and cakes. I suggest you to harvest your own berries if you have a chance.
This time I harvested blueberries and made blueberry sorbet. I love sorbet on a hot summer day. It´s healthy and it´s sugar-free and there isn´t even cream in it. Just berries and water!
Ingredients 500 g blueberries 100 ml water 1 tbsp honey or maple syrup 1 tsp vanilla extract or vodka Directions 1. Blend all the ingredients (vanilla extract with alcohol or other strong alcohol prevents freezing the sorbet too much). 2. If you have an ice cream maker then you are lucky but if you don´t then you have to stir the jam many times. Put the blueberry jam into the freezer and stir it in every 15-30 minutes (about 4-5 times) until it´s like juicy ice cream. 3. Serve with fresh blueberries (if the sorbet stays a few days in the freezer then take it out about 15 minutes before serving). Blueberry sorbet
