Berry Chia Pudding with Coconut Yogurt

Easy & quick chia pudding that is perfect for breakfast or as a dessert! You can use unsweetened coconut milk yogurt to make your chia pudding. Sweeten your chia pudding with banana, vanilla, and berries. Your refined sugar-free breakfast is ready!

Chia seeds are one of my favorite superfoods! They are high protein content, high fiber content, lots of good fats and omega 3. Soaked chia seeds become easily digestible. The idea here is that the body will get all of the nutritional value immediately. These seeds can be soaked in water, milk, juice or any other. My favorite ways are yogurt and cashew milk.

Berry Chia Pudding

Preparation: 5 minutes

Ready: 2 h 5 min

Ingredients:

  • 1 cup natural unsweetened yogurt or coconut milk yogurt + 5 tbsp (choose coconut one for vegan & paleo option)
  • 1 + 2 tbsp chia seeds
  • A pinch of grounded vanilla bean
  • ½ ripe banana (use the one which peel already gets a little bit brown and has some spots on the top (but not inside the banana) because they are sweeter and perfect in the blender)
  • 1/2 cup frozen blueberries
  • 1/2 cup frozen raspberries
  • Some berries for topping (I used blackberries)

Instructions:

  1. Blend banana with yogurt, vanilla until smooth.
  2. Combine with the yogurt mixture with 1 tbsp of chia seeds (don’t use a blender for this). Mix well.
  3. Store covered in the refrigerator overnight (or for at least few hours).
  4. Combine frozen berries with 2 tbsp of chia seeds, 5 tbsp yogurt and vanilla. Mix well (If you want a smooth mixture, then use a blender for berries but don’t blend chia seeds).
  5. Store covered in the refrigerator overnight (or for at least few hours).
  6. Put the chia pudding and berry chia with layers into the glass and serve with extra berries.
