Childhood Breakfast: Semolina
One of the most common breakfasts in Estonia is porridge (we call it “puder”). When I was little, then it was almost the only breakfast we had. When you come to Estonian supermarket, then you can find probably only one section for different porridges. The mixture is made with all the grains you possibly think of (such as millet, buckwheat, oatmeal, barley, and wheat). Estonia has adapted foods from Germany, Sweden, Denmark, Russia and I have no idea where else. Porridge is probably most common in Russia.
What about rice semolina?

One of my childhood breakfasts was always semolina. However, since my body doesn’t tolerate wheat, then I found an alternative. Rice semolina! Once I discovered it, I couldn’t stop eating. Last week I made this four times. After that, I decided that I should eat something else for a change. At least one morning, right?! It’s just addictive.
Semolina vs Rice Semolina?
What is rice semolina? It’s just rice. Well, the rice is already boiled a little bit and then dried and ground into fine almost like semolina powder. It’s made from the entire rice grain, and usually, there aren’t any strings attached. However, always check the package label. The only ingredient should be rice. Usually, they sell it in all health food stores.
Breakfast on Budget?
In Estonia, I can find it in all usual supermarkets at an affordable price. One of my favorite way to use rice semolina is for my breakfast bowl when I feel like I need extra carbs. I’m quite sure I’m going to make some new semolina desserts as well. However, the easiest and quickest way to use it is always porridge.
Rice Semolina with Berries
Servings: 1
Time: 5-7 minutes
Ingredients:
- 0,5 dl water
- 2,5 dl coconut milk
- 0,5 dl rice semolina
- 1/2 tsp honey (or maple syrup when you would like it to be vegan) (optional)
- For serving: berries, seeds or other toppings
Instructions:
- Add water to a saucepan. Bring to a boil
- Add coconut milk and bring to a boil. Lower the heat.
- Add rice semolina and whisk until it gets thick.
- Remove from the heat and add sweetener if desired. Serve with seasonal berries and seeds.
