Fresh Asparagus Salad with Bacon

Asparagus is harbinger-of-spring! I don´t DSC_0935-2imagine spring without asparagus. In the supermarkets, the asparagus is quite expensive … However, many people even don´t know that in their garden is growing asparagus. Many people just use asparagus as a decorative part of the flower bouquet. So look around in your garden or in your grandparents garden maybe you can find asparagus there. I found asparagus in my grandmother garden. However, many years I didn´t even know that it existed there.

When you harvest asparagus, then you should use the young ones. If the asparagus is very tall on old, then the asparagus doesn’t taste good. That´s way the asparagus is best in the spring!

Fresh Asparagus Salad with Bacon

Ingredients:

  • Fresh salad leaves (rocket leaves, spinach) (about 2 handfuls)
  • A few tomatoes
  • Half cucumber
  • ½ tbsp extra virgin olive oil
  • ½ tsp balsamic vinegar
  • 1 clove of garlic
  • About 5 asparagus
  • 5 slices of bacon
  • A pinch of grounded sea salt

Directions:

  1. Preheat the oven to 200° C/ 392° F (grill mode).
  2. Wrap one-half strip bacon around each asparagus spear, leaving tip and end exposed.DSC_0938-2
  3. Cook the asparagus with bacon about 15-20 minutes until bacon is a little bit brown.
  4. While the asparagus is in the oven make the salad. For the salad: chop all the ingredients and mix together. Season with olive oil, balsamic vinegar and salt.
  5. Serve the salad with asparagus.
