Apple Ricotta Cakes


  • About 3-4 apples (in this recipe sourer ones are better)
  • Some cinnamon
  • 400 g ricotta cheese
  • 2 tbsp Turkish or Greek yogurt
  • 2 eggs
  • 2 tbsp raw honey
  • A pinch of vanilla bean seeds


  1. Preheat the oven 180 °C/ 356 F°.
  2. Peel the apples. Use a vegetable peeler and peel thin slices.
  3. Put the sliced apples into the cups (muffin or crème brulee cups).
  4. Add some cinnamon with strainer.DSC_0177-2
  5. Mix ricotta cheese with honey, yogurt and vanilla.
  6. Add eggs. One egg at time.
  7. Mix well until cream.
  8. Add the ricotta cream in the middle of the apple slices.
  9. Bake for 30 minutes on 180 °C/ 356 F°.
  10. Let them cool for few minutes and take them out of the form.
  11. Serve the little cakes warm.
