Raw Vegan Paleo Truffles

The past few weeks I have been concentrated on a small gift project. For me, it means making truffles. A lot! However, I´m still waiting for my boxes. I hope they will arrive in time. Looks like during Christmas time the postage is late like always.

However, here is one of the recipes for vegan, paleo, gluten, dairy and refined sugar-free truffles. Some of these truffles are going to the gift boxes which hopefully will be ready for Christmas. The recipe is really easy and doesn´t take long. But when I creating this recipe I made quite a few trials before I was happy with the results.

Here I used a lot of dates which are just something amazing. They are full of amazing nutrients like fibre and potassium. Dates have just so many health benefits. For example, they are good for digestion, heart, blood pressure and brain. They are sweet but even if you don´t like to eat plain dates then in a truffle they make sense. They are like a glue and help truffles stay in perfect shape. The taste is sweet. Just as I like it!

Peanut Butter Coconut Truffles

Raw Vegan Paleo Truffles

Ingredients

Truffles:

  • 100 g peanuts
  • Pinch of salt
  • 50 g desiccated coconut
  • 3 tbsp cocoa powder
  • 300 g juicy dates (pitted)*
  • 3 tbsp peanut butter
  • 1 tbsp coconut butter or cocoa butter (melted)

Chocolate topping:**

  • 25 g cocoa powder (unsweetened)
  • 50 g cocoa butter
  • 50 g honey

Decoration:

  • 1 tbsp cocoa nibs
  • 1 tsp edible dry rose

Instructions:

  1. Blend peanuts, salt, coconut and cocoa powder in a food processor for few minutes.
  2. Add dates, coconut butter and peanut butter. Blend until smooth and it sticks together.
  3. Roll balls out of the mixture and put them in the fridge while making the chocolate topping.
  4. Melt all the chocolate topping ingredients** on a low heat until combined (make sure it´s a really low heat. If you want it raw, then the temperature shouldn´t go over 45°C/ 113° F).
  5. Take the truffles out of the fridge and drizzle it with chocolate and decorate with rose and cocoa nibs.
  6. Put them in the fridge for few hours until set.
  7. Keep them in an airtight container in a fridge and use it in a few weeks.

Notes:

* If you don´t have juicy ones and you have only dry ones, then soak them in a hot water for 5 minutes and use the water later.

** You can use dark chocolate as well. Just melt 50 g of dark chocolate. It´s a little bit easier to handle dark chocolate then raw chocolate.
