Instagram has got me?!  Persons’ interests? 

One of my favorites quick and easy lunch Buddha bowls that I usually have when I feel like my belly needs some vegetable. It looks like Instagram has got me?! Since I do spend some time scrolling through all the incredible food photography, then obviously I have seen some (or maybe thousands) of Buddha bowls.

When I go there, then almost my entire feed is full of gorgeous food photography and sometimes some landscape as well. I’m sure that some people don’t like the platform and think that it’s a bad “influence”. However, I honestly believe that like almost every other thing in life it depends on the persons’ interests and the way they use it(I rather skip the extreme examples but I’m sure you know what I mean).

Filter the content?

When you do have an Instagram account, then you have apparently realized that you can filter the content with your own actions on the platform. Compare to many online newspapers you can choose even more what kind of content you consume.

Yes, of course, there are ads and everything else. However, I personally usually get only food-related ads and compare to online newspapers they don’t bother me that much right now. It’s just a platform for me to gather some fantastic inspiration for photography.

What is a Buddha bowl?

According to the urban dictionary it “just a bowl which is packed so full that it has a rounded “belly” appearance on the top much like the belly of a Buddha”. You might already know all of this but I just wanted to remind that it’s not like some special Buddha food that has a unique cooking technique.

You can find a ton of recipes with different ingredients. These Buddha bowls here are just made with my own personal preferences. The name might be a little bit confusing when you haven’t heard it before. It is just a food trend that does not seem to go away in the near future. I can’t complain since I love to eat all kind of goodness.

My meal Prep for an easy lunch

The choice of vegetables might be entirely different every time. Sometimes I’m obsessed with butternut pumpkin and other times its sweet potato or zucchini. However, the idea is still the same, and it all depends on my meal preparation. I like to prepare to food only for 2-3 days because I’m quite sure that I don’t want to eat the same food all the time.

Quinoa: Save time?

For example, I cook quinoa for the next two days and then I’m usually sure that I stay on track when I’m busy or come home and would like to eat something straight away.  So, I quickly mix the quinoa with whatever vegetables I have in my home. Sometimes I even use some smoked salmon. I try to make sure that I add some extra healthy fats such as pesto or avocado because these fantastic fats keep me full for a long time and I can avoid unexpected cravings.

Butternut Pumpkin Instagram Buddha Bowl Recipe (Vegan, Gluten-Free & Dairy-Free)

2 bowls

Time: 20 minutes

Ingredients:
  • ½ butternut pumpkin
  • 1 dl quinoa
  • 2 cloves minced garlic
  • ½ tsp coconut butter
  • 4-5 sliced radishes
  • 100 g sliced mushrooms
  • 4 tbsp tinned chickpeas
  • 4 handfuls of salad leaves
  • ½ lemon
  • 1 avocado
  • 1 tsp sesame seeds
  • Seasoning: pink Himalayan salt, turmeric, dry paprika
Instructions:
  1. Firstly, cook the quinoa. You need 1 dl of quinoa, 2 dl water, and some salt and garlic. Let it simmer for about 15 minutes (sometimes I cook some extra to save time).
  2. Clean and dice the butternut pumpkin. Fry it with coconut oil and season with turmeric and salt. When the pumpkin is almost tender add some mushrooms, garlic, and chickpeas.
  3. Smash the avocado and season with 1 tbsp freshly squeezed lemon juice and salt.
  4. Place the salad leaves straight on the serving plate.
  5. Serve it with cooked butternut pumpkin, quinoa, mushrooms, avocado mix, radishes, and sesame seeds
  6. Enjoy! (I usually like to mix it all with that smashed avocado before eating).

Sweet Potato Instagram Buddha Bowl Recipe (Vegan, Gluten-Free & Dairy-Free)

2 bowls

Time: 25 minutes

Ingredients:
  • ½ sweet potato
  • 1 dl quinoa
  • 2 cloves minced garlic
  • ½ tsp coconut butter
  • 4-5 sliced radishes
  • 100 g sliced mushrooms
  • 4 tbsp tinned chickpeas
  • 4 handfuls of salad leaves
  • ½ lemon
  • 1 avocado
  • 1 tsp sesame seeds
  • Seasoning: pink Himalayan salt, turmeric, dry paprika
Instructions:
  1. Preheat the oven to 200° C/ 392° F.
  2. Clean and dice the sweet potato. Roast the sweet potato with coconut oil, salt and turmeric for 15-20 minutes (depends on the size of the sweet potato).
  3. While the sweet potato is in the oven, cook the quinoa. You need 1 dl of quinoa, 2 dl water, and some salt and garlic. Let it simmer for about 15 minutes (sometimes I cook some extra to save time).
  4. While the quinoa is cooking, fry the mushrooms, garlic and coconut oil. Season with turmeric, paprika, and salt.
  5. Smash the avocado and season with 1 tbsp freshly squeezed lemon juice and salt.
  6. Place the salad leaves straight on the serving plate.
  7. Serve it with cooked butternut pumpkin, mushrooms, chickpeas, avocado mix, radishes, and sesame seeds
  8. Enjoy! (I usually like to mix it all with that smashed avocado before eating).

Zucchini Instagram Buddha Bowl Recipe (Vegan, Dairy-Free, Gluten-Free)

2 bowls

Time: 20 minutes

Ingredients:
  • ½ zucchini
  • 1 dl quinoa
  • 2 cloves minced garlic
  • ½ tsp coconut butter
  • 1/2 sliced yellow carrot (or usual carrot)
  • 100 g sliced mushrooms
  • 4 tbsp tinned chickpeas
  • 4 handfuls of salad leaves
  • 2 tbsp homemade pesto
  • 1 tsp sesame seeds
  • 1/2 lime
  • Seasoning: pink Himalayan salt, dry oregano, black pepper
Instructions:
  1. Firstly, cook the quinoa. You need 1 dl of quinoa, 2 dl water, and some salt and garlic. Let it simmer for about 15 minutes (sometimes I cook some extra to save time).
  2. While the quinoa is cooking clean and dice the  Fry the zucchini with coconut oil, mushrooms, chickpeas, garlic, salt, oregano, and black pepper.
  3. Prepare the pesto (recipe here).
  4. Place the salad leaves straight on the serving plate.
  5. Serve it with cooked zucchini, mushrooms, chickpeas, avocado mix, carrot, lime slice, and sesame seeds.
  6. Enjoy! (I usually like to mix it all with that pesto before eating).
