Acai bowls have become one of those “millennials” breakfasts that almost every other health junkie likes. Let’s be honest. Once I had my first acai bowl a few years ago, I couldn’t resist becoming one of them as well. It gives that extra pleasant flavor for smoothies. When you read about the acai powder, then the health benefits are endless. It’s high in antioxidants, boosts skin health, improves focus and memory. It might even control your appetite and digestion. It also protects the heart, improves cholesterol levels and helps to balance hormones.
I even like to add one teaspoon of acai powder and chia seeds to my water to get some extra vitamins when I feel tired. It might sound like extra strange, but it works for me. I drink that instead of taking extra vitamins. Also, chia seeds keep me full for a long time, and I can be sure that I won’t have any sudden cravings before dinner.
One of my favorites ways to use acai powder is obviously smoothies. Especially, when I can get that “nice cream” texture that is my kind of ice cream. Recently, I have tried to add some extra vegetables to my smoothies. I couldn’t believe that I would say that, but frozen zucchini is MAGICAL. It has that creamy texture. When I wouldn’t know, then I would never guess that it’s inside the smoothie. I can recommend freezing the leftover zucchini you have and use them in your smoothies.
Quick Vegan & Paleo Acai Bowl
serve for one
- 1 tbsp acai powder (US/ UK)
- 50 g frozen bananas (if you are on a keto diet, then leave it out)
- 50 g frozen zucchini
- 100 g blueberries
- 25 ml water or cashew milk
Decoration: Strawberries or blueberries, some chia seeds
Instructions: Blend all the ingredients and decorate.
